Ingredients:
- 1 pound large raw shrimp, peeled and deveined
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup cold water
- 1 egg
- Ice cubes
- Vegetable oil for frying
Instructions:
- Heat the vegetable oil in a deep pot or a wok over medium-high heat. The oil should be about 350-375°F (180-190°C) for frying.
- In a large mixing bowl, whisk together the flour, cornstarch, baking powder, and salt.
- In a separate mixing bowl, lightly beat the egg and then mix in the cold water. Add ice cubes to the mixture to keep it cold.
- Pour the wet ingredients into the dry ingredients and mix until just combined. The batter should be lumpy and not too thick.
- Dip each shrimp into the batter and coat it evenly. Use a slotted spoon or tongs to remove any excess batter.
- Carefully place the battered shrimp into the hot oil and fry for 2-3 minutes or until golden brown. Don't overcrowd the pot or the temperature of the oil will drop and the shrimp will not cook evenly.
- Use a slotted spoon or tongs to remove the fried shrimp from the oil and place them on a paper towel-lined plate to drain off any excess oil.
- Repeat the process with the remaining shrimp, ensuring the oil temperature stays consistent.
- Serve the fried shrimp tempura immediately with your favorite dipping sauce such as soy sauce, sweet chili sauce, or tempura dipping sauce.
