Ingredients:

  • 1 pound large raw shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup cold water
  • 1 egg
  • Ice cubes
  • Vegetable oil for frying

Instructions:

  1. Heat the vegetable oil in a deep pot or a wok over medium-high heat. The oil should be about 350-375°F (180-190°C) for frying.
  2. In a large mixing bowl, whisk together the flour, cornstarch, baking powder, and salt.
  3. In a separate mixing bowl, lightly beat the egg and then mix in the cold water. Add ice cubes to the mixture to keep it cold.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. The batter should be lumpy and not too thick.
  5. Dip each shrimp into the batter and coat it evenly. Use a slotted spoon or tongs to remove any excess batter.
  6. Carefully place the battered shrimp into the hot oil and fry for 2-3 minutes or until golden brown. Don't overcrowd the pot or the temperature of the oil will drop and the shrimp will not cook evenly.
  7. Use a slotted spoon or tongs to remove the fried shrimp from the oil and place them on a paper towel-lined plate to drain off any excess oil.
  8. Repeat the process with the remaining shrimp, ensuring the oil temperature stays consistent.
  9. Serve the fried shrimp tempura immediately with your favorite dipping sauce such as soy sauce, sweet chili sauce, or tempura dipping sauce.
